      Bibimbap Dinner

      A well-rounded, nutritious, meal that hits all 7 tastes: sweet, sour, salty, spicy, bitter, astringent in just the right amounts.

      FOR YOUR HEALTH: Bibimbap is a low-calorie dish packed with all the colors of the rainbow to give you a wide cariety and balance of micro-nutrients that fills you up without slowing you down.

      Ingredients

      brown rice, black-eyed peas, spinach, zucchini, bok choy, carrots, radish, mushrooms, green onions, red cabbage slaw, gochujang sauce, sesame seeds, sprouts (Agrarian Feast), lemon

      Serving / Reheating

      STOVETOP

      In a heavy skillet or cast iron pan, add a little oil and heat on low until warm (cover the top to help heat through more quickly)

      MICROWAVE

      Or microwave if you prefer

      Add Baked Pumfu

      Versatile vegan tofu side dish to complement either or both dishes. Made from organic pumpkin seeds. Gluten-free.

      FOR YOUR HEALTH: A firm tofu-like product rich in magnesium which your body uses for bone health, heart health and other processes and also a good source of protein.

      Curry Millet Cakes

      Hints of spice, dense & crunchy yet light and easy to digest. With cilantro chutney, red cabbage slaw, mixed greens & chickpeas.

      FOR YOUR HEALTH: According to Ayurveda, millet is a great grain to eat in the spring. Since we’re entering a wet season, millet will pacify kapha, enable good digestion and help get us moving again after a sluggish winter.

      Ingredients

      millet, shallot, spinach, carrots, garlic, curry powder, flax meal, red cabbage slaw, chickpeas, mixed greens, lemon, cilantro, salt, coconut sugar, green chile, ginger, black pepper, cashews, radish, sunflower seeds

      STOVETOP

      Reheat in non stick skillet with a little oil on low with a lid to heat through, or in the oven at 325 degrees for 10-15 min

      Brussels au Gratin

      Our brussels au gratin is creamy, crispy and very green with a hint of lemon and herbs, This dish proclaims, “Spring is here!”

      FOR YOUR HEALTH: This dish is rich in vitamin K and omega-3 fatty acids that are hard to find on a vegan diet. High in fiber also for digestive health.

      Ingredients

      brussels sprouts, asparagus, zucchini, thyme, mint, salt, lemon zest, coconut milk, olive oil, black pepper, nutmeg, a little bit of gluten-free panko, sprouts

      Serving / Reheating

      STOVETOP

      In oven at 325 degrees for 10-15 min, or in a medium skillet over low flame with a little oil and a lid to heat through

      MICROWAVE

      Or microwave for a few minutes

      Chana Aloo
      Ghobi

      Our Chana Aloo Ghobi is a mild/medium spiced cozy, hearty (but low calorie) comfort food ideal for spring’s chilly entrance.

      FOR YOUR HEALTH: This dish is a great source of minerals and vitamins. High fiber which helps lower cholesterol. Our version is low in salt and low fat for heart health.

      Ingredients

      cauliflower, chickpeas, potatoes, green beans, onions, tomato, cashews, garlic, ginger, cumin, coriander, paprika, green chili, cayenne, fenugreek, garam masala, cilantro, lime, jasmine rice

      Super Green
      Chana Saag

      Nourishing mildly spicy spinach paired with tangy chickpeas, tomatoes and basmati rice. Comforting and filling.

      FOR YOUR HEALTH: This dish is high in protein which rebuilds and repairs digestive issues, high in fiber which promotes regularity and feeling good and low calorie.

      chickpeas (chana), spinach, ginger, onion, cilantro, garlic cloves, tomato, Garam masala, coconut oil, red chilis, garlic, asafoetida, lemons, basmati rice

      Baked

      FOR YOUR HEALTH: Our fresh, organic greens are high in fiber and minerals, which aid in digestion. 

      Laksa

      Laksa is a Southeast Asian spicy, aromatic, vegetable rice noodle soup, a broth that’s slightly creamy, sweet and sour, with coconut milk and lime, gentle warming spices, balanced with lots of vegetables and fresh herbs.

      ginger, garlic, turmeric lemongrass, spices, mushrooms, carrots, peppers, zucchini, broccoli, coconut milk, cilantro, cashews, lime

      Serving / Reheating

      In a pot on stove, add the noodles to the broth and vegetables and heat on low to simmer

      Congee

      Congee is a Chinese rice porridge that’s cooked very slowly with lots of broth to provide a healing, comforting, easy to digest, filling yet low-calorie meal, packed with nutrients, umami flavors and added roasted vegetables.

      Ingredients

      long white rice, ginger, garlic, shiitake mushroom, spinach, butternut squash, vegetable broth, sesame oil, coconut aminos, sesame seeds 

      Serving / Reheating

      In a pot on stove, heat on low to simmer. Add a little water to thin as desired (congee will thicken as it settles)

      Kinpira Salad

      Kinpira salad is healing and detoxifying with braised burdock, carrots and onion. It’s savory, slightly bitter and sweet and is macrobiotic.

      Included with your dinner order. Serving size: approx. 1 cup.

      Stew

      Originating from South Indian cuisine, this Mulligatawnay stew is both savory and sweet. It’s nourishing, grounding, easy to digest and a comforting dinner choice.

      This Pad Thai is a little sweet and spicy, rich and comforting and balanced with plenty of vegetables.

      Dandan noodles originated as  a Sichuan street food classic. Known for their spicy profile, this vegan version is nutty, earthy, creamy and just a little spicy.
